FIND OF THE WEEK: Make-Ahead: Easy Baking Mix from Martha Stewart
As I was searching for Thanksgiving meal recipes, I came across a recipe in Martha Stewart Magazine for a baking mix you can keep in your freezer to make it easier to whip up some muffins, scones, or biscuits. Well, since I am not proficient in just “whipping up” a baked good—I am not known for my baking skills—I am always interested in tips that will help me out. I kept the recipe since I knew it would come in handy over the holidays.
The recipe (see below) has some suggested uses for the mix, and we tried out the banana muffins. They were a hit with my kids, and the baking mix is a definitely a hit with me since it will make baking an easier process.

Homemade Baking Mix, from Martha Stewart Living (Oct. 2014)
- 3 tablespoons sugar
- 2 sticks frozen unsalted butter, grated
- 2 tablespoons plus 2 teaspoons baking powder
- 1 tablespoon plus 1 teaspoon coarse salt
- 6 cups all-purpose flour
Whisk sugar, baking powder, salt, and flour. Stir in butter. *Variation mentioned: For a whole-wheat version, replace 2 cups of the all-purpose flour with whole-wheat flour.
