We’re kicking off the new year with a month of breakfast recipes. Breakfast fuels the body for a day of activity. Start the dark, cold winter mornings with these comforting dishes of crepe-like pancakes and creamy fruit smoothies.
A Taste of Summer Smoothie from Sharon Perez
Serves 4
- 1 1/2 cups apple juice
- 1/2 cup plain yogurt
- 1 banana
- 2 cups frozen fruit (blend of mango, papaya, strawberries, pineapple)
Put all the ingredients into a blender or Vitamix with the apple juice first and frozen fruit last. Blend until smooth.
Swedish Pancakes from Garnet Wilson
- 3 eggs
- 1 1/4 cups milk
- 3/4 cup flour
- 1 tablespoon sugar
- 1/2 teaspoon salt
Put all ingredients into a bowl and stir with a whisk until smooth. The pancake batter is thin and will make thin, crepe-like pancakes. Cook on a buttered skillet until bubbling on each side. Eat plain or serve with syrup or jam.
